Sooo we'll be celebrating Epiphany day soon and my cousin is allergic to gluten and he never gets to eat the galette. I've tried to look up for a recipe to get a GF puff pastry and it looks so difficult and expensive (I'm not the best cook either).
Is it a good idea to make a round rice pound cake and fill it with frangipane to get the galette taste?
Also is it a good idea to add orange flower water or it will ruin the rice cake /frangipane taste?
Working my way through the grammar book and stuck on this. I get the logic here:
Une bouteille = des bouteilles (count noun) Un chien = des chiens (count noun) De l’air (mass noun) Du beurre (count noun)
Why isn’t gâteau a count noun? Something just to accept or can someone explain the logic? Any other discrepancies like gâteau you can think of here?

I thought that biscuits/cookies were just "biscuit" en français, but my vocab learning app says that biscuit (or more specifically cookie?) is "gâteau sec". Duolingo only seems to use "biscuit", which leads to my question.
Does anyone actually use "gâteau sec" for cookies/biscuits? Dry cake sounds pretty depressing for a delicious cookie...
