I have half the prep at home from other projects so I figured Iโd give his ramen a go. Looking through the book and the sofrito calls for 6 hours of cooking. Seems excessive to me. Also the fact that I have a home sized oven and donโt wanna run it six hours for a small batch sofrito.
Any experienced people here, can you say itโs a worthy process? I get commercial for matters of uniformity and theyโre cooking big hotel pans but all the sofritos Iโve seen are just stovetop cooked. I understand slow cooking for gentle caramelization but it seems excessive.
So my question, would you say slow oven cooking is a must? Has anyone tried just an hour or 2 stovetop? Also general thoughts? Canโt seem to find much info online but the few things I found were negative. From too much oil to not worth the final product etc. Also as I formulate this post Iโm just realizing I can half the recipe and use my small crockpot just have to check if the temps are similar.
When making bolognese, I take the time to chop the onion, celery and carrot with my knife. What would keep me from chucking everything into a food processor, blast it to a chunky paste and cook it? My thoughts were that it shouldn't be that harmful to the dish because it cooks for 4+ hours anyway. Plus it would get rid of the celery strings. And I could freeze an enormous portion of it to chuck it in any dish that calls for it. It's just a question, I don't want anyone to feel offended because I disrespect any tradition. So many recipes start with mirepoix, sofrito, cajun trinity, or some other combination of onion + celery + other as the basis of stews and sauces. What is it about these different combinations that make it a good base for recipes? Is it like the sugars + maillard reaction components from the onions that give most of the body? If so what are we getting from the celery and carrots/peppers?
I would really be interested in as detailed an answer as anyone has got.
