Hi All! I'm going to post this individually, but it's also in the comments of my introductory post. So here you go. I am going to edit this one a little, because I thought of something I do to this particular soup to make it thicker. I hope you enjoy and if you have any questions, please ask!
Corn Chowder:
Seasonings (as much as you want, really):
Instructions:
Instant Pot: Throw everything in but the coconut milk, and retain 1/3 of the frozen corn. High pressure, 20 minutes. When it's done, quick release. Blend some of the soup with either a blender or an immersion blender, but leave it chunky. Add the can of coconut milk and the last 1/3 of the corn. Stir to blend. If youβd like it thicker, mix separately: one tablespoon of corn starch into ΒΌ cup of cold water, mix well, and pour into soup, then stir well.
Stovetop: Saute the onion, garlic, carrots, and celery until soft. Add everything else in, but the coconut milk, and retain 1/3 of the frozen corn, Simmer for twenty minutes, covered, stiring so it doesn't stick/burn. When it's done, blend some of the soup with either a blender or an immersion blender, but leave it chunky. Add the can of coconut milk and the last 1/3 of the corn. Stir to blend. If youβd like it thicker, mix separately: one tablespoon of corn starch into ΒΌ cup of cold water, mix well, and pour into soup, then stir well.
Makes 6-8 servings.

I hate corn chowder.
I like corn. I like chowder. The 2 combined is absolutely disgusting.
Iβve given it many chances. Multiple restaurants, twice homemade. I want to like itβ¦ I really do. But itβs bad.
Id rather have no soup than have to even smell a cup of that warm upchuck they call CORN CHOWDER
An elderly woman came in today and asked for the corn chowder. She was referring to the corn salsa, thatβs a new one
Southern Illinois has amazing chowders (the event) and at they serve chowder there (the food) that I haven't been able to find a dependable recipe for. I am looking for a chowder similar to what is served in Albion, Bone Gap, etc.
It's pretty much for sure that my father is no longer able to travel long distances and I'd love to bring this taste of his home to him.
If this is the wrong SR or you have ideas of where else to put this, please let me know!
Every so often I find a few slimey things in my soup. I'm assuming that they are onions. Any other ideas?
