First I will prepare Butterscotch.
Grease a plate with Oil to keep Butterscotch after preparation.
Add 1 cup of Sugar in hot pan. Let the Sugar melts. Once Sugar will start melting, keep on stirring
After Sugar is fully melted, add 2 tablespoons of Butter and stir continuously
The Butter is fully melted. Add crushed Cashew Nut and mix well. Continue stirring.
After few minutes, switch off the flame. The Butterscotch is ready.
Spread the Butterscotch into plate greased with Oil and keep for 1 hour.
After 1 hour Butterscotch is set properly. Break it in small pieces and crush.
Next I will prepare the Mango Pudding. I will use 2 ripe mangoes.
Cut the Mango. Scoop out the pulp into blender jar. Cut out the pulp from seed.
Add 1/2 cup of Sugar in the blender jar and blend.
Add 1 cup of Milk in the blender and blend again
Blending is done and mango mixture is homogeneous
Next, prepare Cornflour solution using 1/4 cup of Cornflour and 1/4 cup of Milk
Grease a Bowl with Butter. I will keep the Mango Pudding in this Bowl.
Now I will cook the Pudding. Transfer the Mango mixture in a pan and heat with medium to low flame.
Continue stirring. Once the mixture has started boiling, add cornflour solution part by part and keep on stirring so that lump does not form. Before adding the cornflour solution, stir the cornflour solution.
Low the flame. Add 2 teaspoons of Lemon Juice to bring silky texture of the pudding.
Switch off the flame
Transfer the Pudding in Oil greased bowl
Tap the bowl to remove air. Cool to room temperature. Then refrigerate for 2 hours.
After 2 hour Mango Pudding is properly set. Transfer the Pudding in plate.
Mango Pudding is ready. Garnish with Butterscotch and serve.

That caramel is sooooo good. The cake was delightful when warm. The rice pudding part was a tad too dense for my liking, but maybe that's from using a smaller cake pan and having a much taller rice pudding to custard, caramel and mango ratio.
Definitely use mango that's super ripe and pudding soft. It's super delightful that way :D
It reminded me of Thai desserts, so maybe some drizzle of coconut milk will be delightful too :)
