Hopefully this kind of post is allowed here. Iโm not affiliated with this company in any way. I just want other people who are like me and canโt eat dairy yogurt to know about this product so they can buy it and make it successful (so that I can keep buying it!). Itโs brand new, I saw it in the store for the first time and gave it a try and the textureโฆ.omg the texture. So thick and creamy. I miss Greek yogurt so much but this is an amazing substitute. Seriously, try it!
So I've been making Skyr style yoghurt using store bought Skyr as my starter and some rennet. Using 0% fat milk. As per the tradition, I add in 2 or 3 tablespoons of the whey and whisk (well blend) it to add in air.
And thus I have my Skyr! My understanding is that Skyr is naturally lactose free. However I'm getting lactose intolerance symptoms with my homemade yoghurt :D
What am I doing wrong here? Do I need to be using lactose free milk?
My parrot accidentally got a bit of my Skyr before I could stop her. I believe she only got a tiny bit, but I am worried. Would a tiny amount really be enough to hurt her? Should I take her to the vet?

Skyr recipes I've seen scald milk before cooling, adding cultures, and adding rennet. I'm not sure what rennet is doing here, as I would think that heating milk to 180F would kill rennet's abilities to thicken milk. But, I found numerous recipes on line for this technique. Anybody know why?

I spent three weeks in Iceland and while there ate Skyr on a daily basis. I think we bought little packs of it in 10-11 stores. (They came with the spoon as well ). Does anyone know what the brand is ? ( there are ton of flavors and my favorite was creme brรปlรฉe )
Also, the brands they sell in the US ( Ziggiโs is terrible comparing to real Icelandic Skyr ).
