I saw a post the other day and someone mentioned how delicious this place was, I want to try it but want to know peoples recommendations! I am not picky.
Edit: took some of your advice and did Tehran Chicken and Fessen Jun. Omg π€€ one of the best things Iβve eaten in a long while. Definitely going back. And Ahmad himself made it, and he was such a nice guy.

Number 0: Tahdeeg Persian Cuisine nasal hydrogen peroxide torture. The last thing you'd want when you go to Tahdeeg Persian Cuisine is having your sinuses tortured with hydrogen peroxide. But as it turns out, that might be what you get. A 4channer uploaded a video anonymously to the site showcasing his horrific experience. With the statement: "This is what happens to you at Tahdeeg Persian Cuisine." Admittedly, he a nose plug on.
But that's even worse.
The post went live at 11:38 PM on July 16, and a mere 20 minutes later, the Tahdeeg Persian Cuisine was alerted about the post. At least, I hope they care. How did it happen? Well, the 4channer hadn't removed the Exif data from the uploaded video, which suggested the restaurant was somewhere in Persia. This was at 11:47. Three minutes later at 11:50, the Tahdeeg Persian Cuisine branch address was posted with wishes of a happy shut-down. 5 minutes later, the news station was contacted by another 4channer. And three minutes later, at 11:58, a link was posted: TPC's "Tell us about us" online forum. The torture video, otherwise known as exhibit A, was attached. Cleveland Scene Magazine contacted the TPC in question the next day. When questioned, the breakfast shift manager said "Oh, I know that restaurant. They're getting shut down." Mystery solved, by 4chan. Now we can all go back to eating our fancy food in peace.
I understand that spices like chilis weren't always a part of Indian and East Asian cuisine, but I have always wondered why Persian cuisine (other than the heavily Arab influenced South) is almost devoid of spicy dishes. Persia/Iran has been trading with India for centuries. There are many similarities between traditional modern Persian and Indian cuisines (stews, rice dishes, kabob, a love for yougurt), and even the name for chicken is almost identical in both Farsi and some northern Indian dialects. But it seems to me like too much of a coincidence for the lack of spicy dishes in Persian cuisine to be something other than a conscious cultural choice to reject spiciness by Persians. I know that food plays a huge part in cultural Identity, and i think it's safe to rule out the lack of availability of chilis, so is there any historical record or cultural context that explains this apparent rejection of spiciness by Persians?

Persian cuisine seems very unique to me. I can Imagine it got heavy influenced by arabian/islamic culture. I'd love to know more on how Persian food has evolved and if there are still common elements with pre-islamic Sassanid cuisine (slow cooked stews perhaps?).
Is the overall health of the country? Do you have obesity at all? How is the physical activity of people who are consuming high carbohydrates, high red meat and high animal fat diet on daily basis? How is the cardiovascular, cholesterol, renal and hepatic health of the country? Kindly ask me anything if any further clarification is required.

Thanks for such a descriptive explanation. What I can collect from the answer is that the key is that the Iranian cuisine is a well balanced cuisine with ingredients from every macro nutrients family. Usage of herbs and vegetables ensure inclusion of vitamins and minerals to the diet. Usage of spices and herbs also provide the concept of hot and cold which I feel is similar to digestive fire of Indian philosophy.
I agree with one study provided where Iran is on a watchlist of growing obesity and health issues. Many other countries like Afghanistan, Pakistan and India are also on a similar list whose cuisines share some overlap. However the cuisine is not to be blamed as an overall picture of lack of physical activity, Advent of Western fast-food, and usage of things like processed Vegetable oil might be the reason for such Spike.

Does anyone have recs for cookbooks or other resources for these cuisines? I am not a recipe follower by any means, I mostly like cookbooks to learn the flavor profiles of a new cuisine so that I can get creative, I have access to a pretty fantastic grocery store so specialty ingredients and produce isnβt an issue.
Not interested in Israeli cookbooks ( I have some already :) )
Just something I've wanted to do for a while. I made my own harissa which turned out great, and I'm looking to upgrade my pantry to allow for more dishes along these lines. Thanks!
