The usual suspects: Oil, salt, lemon etc. & basic spices.
Have: Pressure cooker and steamer, and also microwave.
Dal Makhani, a creamy gravy based North Indian dish to be eaten with steamed rice or Indian flat breads (Naan, Roti etc.)
