1850s Greek Revival - replacing knob and tube/fixing cast iron plumbing?

We are under contract for a rambling Greek Revival/farmhouse built in 1850 in New England. Had the inspection on Friday, and in addition to the things we expected (soft floorboards, porch needs replacing, window/door issues, standard old house cosmetic stuff) the inspector found a good amount of knob and tube wiring and potential leaking/clogging with some cast iron plumbing in the house. We knew this was a fixer going into it but were not anticipating replacing plumbing/electrical in year one. Anyone have experience replacing sections of knob and tube or reworking very old plumbing and have a sense of cost and timing? Has anyone replaced knob and tube over time (like going room to room as you renovated rather than all at once)? We plan to go back to the seller to try to get repair credit or lower the price but also want to understand what we're getting into. I also understand the labor shortage and that it may be a while to fix these things so want to be realistic. Thanks!
