Shortly after the Catholic Diocese of Speyer started releasing its records on the paid platform Archion, the Catholic Diocese of Eichstätt has now started releasing its records on Matricula for free! The Diocese is located in central Bavaria (detailed map here).

The initial upload consists of 92 parishes. More will be uploaded over the next months. Mind that the churchbooks have not been indexed and need to be browsed manually. Familysearch might index them in the future, as they have done with the holdings of other German Diocesan archives.
The next two Dioceses to put their records are online are the Dioceses of Bamberg and Limburg - both uploads have already been prepared behind the scenes at Matricula. These Dioceses should go online within the next three months. Let me know if you have any questions.
Edit: It was hinted that the Geheimes Staatsarchiv Preußischer Kulturbesitz might put more military churchbooks from Prussia soon as well.

the Diocese of Cologne (Köln) has put a number of churchbooks from its jurisdiction online. The borders of the bishopric can be found here - a more detailed PDF map can be found here (21 MB).
You can find the records here on a dedicated website.
I am listing the steps you need to take to get to the churchbooks below:

Know which parish you need.

Open the link and click on "Dekanats- und Pfarrarchive (mit Teilen von Stifts- und Klosterarchiven)"

Click on "Kirchenbücher" and then "Kirchenbücher (KB / KBN). This will open an overview of all the parishes.

Click on any parish to open a list of records. Clicking on the icon next to one of the records opens a dropdown overview containing a description of the churchbook.

If the churchbook in question has been digitalised, the overview will have a line saying "Digitalisate: Im Mets-Viewer öffnen". Follow the link of "Im Mets-Viewer öffnen" to be taken to the digital records.
In other news, the website of the Diocese of Eichstätt now states that it aims to release its records online starting from November 2021. It is expected that the records will be made available through Matricula (borders of the bishopric here).

As a fair warning: Eichstätt is a tiny bishopric, so the only "tourists" we get are here for religious reasons. As a result, most of the cards have at least one little picture of the cathedral, the virgin Mary, statues of bishops, etc.
If that doesn't bother you, request away! I'll send them anywhere :)
