Iβve looked at every local storeβs website and no one seems to have it. I just want to make some arepas. Any store that actually carries hispanic foods?
I'm currently reading Stanley Tucci's food forward memoir "Taste" and he brings up using cornmeal or salt to purge his clams before cooking in a seafood stew. Has anyone ever heard of using cornmeal for this? Does it work? I'm a chef and haven't heard of it. Goes to show there's always something new to learn.
I am an organic farmer who is playing around and growing a variety of different heirloom dent corn. This year I had an amazing crop of red corn come in that I have cleaned and ready to mill. I've already milled down a few hundred pounds and given it away and have many, many more to go.
I'm looking for ideas and recipes that use cornmeal. Whether it's your ol' meemaws favorite family corn porridge or something completely new you dreamed up, I'd love to know it!

I hate the crunchy texture (I know...sacrilege) of fried fish with cornmeal. I prefer something light and soft.
For context, I grew up in the Southern US, so not sure if this is just a regional thing, but Iβve tried searching Google and hav yet to find the answer!

Cornmeal Dumplings for Pot Liquor
(to be cooked on top of greens)
1/2 cup all-purpose flour
1 1/4 cup coarse yellow cornmeal
2 teaspoons packed brown sugar
2 teaspoons baking powder
3 tablespoons unsalted butter
1 cup whole milk or buttermilk
PREPARATION
Whisk together flour, cornmeal, brown sugar, baking powder, and salt, then blend in butter well with your fingertips. Stir in milk until just combined. Let dough stand 5 minutes.
With wet hands, roll rounded tablespoons of dough into golf balls.
Gently place dumplings on top of greens. Cook, covered and undisturbed, over low heat until greens are very tender and silky and dumplings are puffed and cooked through, about 20 minutes. Season with salt and pepper if necessary.
Tastes awful, textures awful, it falls apart and I do not think the yeast worked properly either. You're better of doing literally anything else.
