I'm quite craving some good chicken biryani for a few days...open to suggestions. Budget is around βΉ300 (Β±60 works) per person.
I am not sure what happened in the last 2-3 years, but in my locality it seems like one in every 3 shops is a biryani shop. What is happening? Have you noticed this in your area? I am from Velachery btw.
Preferably Pakistani biryani, but I am open to anything. Iβve never tried it, and I currently have covid so I canβt taste/smell anything. Once my senses come back (and Iβm no longer contagious of course,) I plan to treat myself to something new, haha.

I have been wondering if Dutch oven can be used for making kachi dum biryani (meat goes in raw) - and what adjustments are needed from traditional method?
Is it possible lol? I don't want to have to buy a crazy amount of spices but all the recipes I've seen have at least 7 or 8 items I would have to go and buy, probably to not use for a good amount of time since I don't cook Indian food a lot.

Edit: guys chill, no disrespect to anyone or Pakistan's biryanis, just making a satire on how for many tourists to the city paradise has be benchmark for Hyderabadi biryani. I respect people have their tastes but there are places whose Hyderabadi biryani is much better and deserves to be the poster child for Hyderabadi biryani.

I tried making lamb biryani today.
I used this recipe. It worked really well right up until the end. When it was done, the lamb was completely overcooked and had lost all its texture. The masala, which was beautiful and flavourful at first, had completely evaporated and turned dry.
I used a Dutch oven with heavy lid and low fire for the final 20 minutes, but it was clearly too much and it ruined what could have been such an amazing dish π

So recently I had biryani from a shop famous for galouti kebab. The biryani was the worst till date , the rice was undercooked , there was no flavour, the mutton was rubbery. I have had biryani from many popular lucknow joints but most shops lack consistency in taste and quality. Which biryani do you like and how much would you rate them out of five?
It has the usual ingredients you would expect but also rare stuff like black cumin seeds, pomegranate seeds and prunes.
I dont have green cardamom but it will be fine without it.
He grinds all the whole spices then adds the ground spices like cumin, tumeric and coriander. Then he just adds the dried plums. He doesn't grind it. Is that common?

I usually order curries but decided to try something different and ordered veggie biryani (extra spicy). It came with a yogurt sauce and a brown sauce. Do most people use these for dipping, or do you drizzle it over the rice?

Hey guys, I'm in the process of opening a biryani cloud kitchen. Still in the process of organizing the sources but before that I wanted to kn esp in Chennai what kind of problems you usually face when you want to eat biryani? Whether it's going to restaurant or ordering online. For eg., like biryani costs too high, or packaging not good or biryani isn't heated.. something like that.
