Put a SKR 2 in my brother inlaws CR10S5 and an BLtouch as well. Did the usual configure and compile Marlin. The problem is, when I go to move>bed level>z offset I can't get it to adjust up or down. Turning the knob doesn't change the value. I can go into the advance menu and change the z offset that way just fine, and I can also move the z axis below zero (software endstop is disabled) it's GOT to be a setting I'm overlooking. I've compiled firmware a millions times it seems but never had this issue before

We make high-end, full-color, hardcover books have been been successful enough that I'm starting a second company aimed at different market, but US pricing for offset runs under 500 is a killer. With multiple titles, putting $20,000 into any one book isn't an option, and due to the risk I'd rather pay a higher per-copy cost for 200-400 copies.
I've been browsing PublishersGlobal.com for options, but publisher resources and printer reviews seem scarce generally. I notice similar books are printed in Slovakia, Italy, and elsewhere, so I've been doing some outreach in E. Europe. China feels sketchy, but there's no question about the cost differences elsewhere.
The only option seems to be to find find a reliable printer overseas with a solid track record, so my questions are:
