Hello All! We have a favorite pasta sauce in the family, that has for a long time been known as Arrabiata. ...It is however chock full of bacon.
A friend of the family suggested that perhaps the name we were looking for was Amatriciana, as some variations use bacon instead of guanciale.
...but I don't think I've ever been served amatriciana with the distinct sear of Birdseye chilis.
Is there a third sauce out there somewhere that corresponds to my Arrabiata with bacon or Amatriciana with dried chili?
Am I just over thinking this? (Yes.)

Are there any Italian restaurants in Columbus that do a proper Amatriciana sauce? The dish might be called "alla amatriciana" It's a tomato sauce made with pancetta (or pork jowl if you're really authentic) with a little red pepper, sometimes a pinch of pecorino, and spices. It's a bright, sauce with a nice tang. (Not to be confused with Arrabbiata , which uses olive oil) . It's easy to find on the east coast but I have a hard time finding it here.
I have half a kilo of guanciale. I absolutely adore spaghetti carbonara, so I'll use some for that. I will also make amatriciana. But I'd like some variation, so what else can I do with it? Something Italian would be nice. Any other pasta dishes? The taste is fantastic, but it's too fatty for me to eat more than a small bite uncooked.

I made pasta all'amatriciana for the first time last night. I used bucatini and cured pork jowl. Sauce was just diced onion (sweated in olive oil for a bit) and half a can of cento san marzano peeled tomatoes, hand-crushed. The result was deliciously flavored but gf and I both agreed a tad greasy. Still yummy, but just a little too ... unctuous?
I imagine this effect comes from the jowl, since it appears to be mostly fat. Is the solution as simple as pouring off some of the fat after the jowl has cooked? Will I lose too much flavor that way? Or possibly don't use any olive oil? (Not sure olive oil is necessary anyway, since the jowl provides so much fat by itself.)

We actually booked before Italy removed their US tourist quarantine requirement. At the time, the only way around the quarantine was to fly on a covid-tested flight which cost as much as flying business. I was fairly confident Italy would drop this before our trip because Spain and France had just opened up. Because of this, our non-covid tested flight on business class was much cheaper. Flying business is a splurge for us, and not one that I take for granted. We had discussed beforehand that if we couldn't find a deal on business flights, we simply wouldn't go. Flights: $3640.27
