Époisses cheese Puns

I'm surprised it hasn't decade.

Was having a discussion the other day about these questions and would love input/experience from the community.

Things we discussed/debated:

- Are there specific cheeses available to a larger supermarket type purveyor, e.g. Fairway Markets in the NYC area, that are not available to smaller, dedicated cheese mongers? How about vice versa? And if so which cheeses? And if, say, the larger market doesn't have it, is it because they can't get it, perhaps because their minimum quantity is too large for the supply available? And so it winds up in small shops?

-If both large and small shops are selling, say, an Époisses that seems to come in the same container, is it the same cheese? Is there any sort of A-stock/B-stock sorting that happens? To whose benefit - the smaller or larger place? Prices can be wildly different between the two types of stores of course.

At a local, one-off monger where I was a good longterm customer I have definitely purchased what I like to call contraband cheese - very obviously legit non-pasteurized stuff that's smuggled in in one way or another, and for sure you're not going to find that at a supermarket.

Sorry if this has been discussed before but I appreciate any thoughts and experience here.

For context I'm a Refuse Driver (Garbage man) & today I was on food waste. After I'd tipped I was checking the wagon for any defects when I spotted a lone pea balanced on the lifts.

I said "hey look, an escaPEA"

No one near me but it didn't half make me laugh for a good hour or so!
