Iβve been looking around this Reddit for suggestions on sauerbraten and was glad to find quite a few! I ate this in Germany while traveling for a few days and the gravy was absolutely incredible. Iβm going to replicate it at home during this winter season and get the best round roast that I can buy, which will set me back quite a lot along with the wine (I see Pinot Noir and Syrah were what I was thinking as well, I have one of each), so I want to get it right the first time. I was concerned about the long pickling time and keeping the meat under the marinade well enough, even if I know that is supposed to keep the meat safe for so long. I also wonder if the wine will turn after such a long time marinating (I plan to do 7 days).
There is a thread about a year ago on r/maryland asking about it. Is it really gone? Has anyone found it recently or know anything?

About a year ago I went to a American-German restaurant while on vacation. While there, I got the sauerbraten, which they said they marinated with some spices and a Burgundy wine for about 5 days; it served with a reduction sauce. It was one of the best roasts I've ever had.
I've been looking for recipes online, but I'm worried that sometimes the online recipes don't actually taste that good. Seeing that this dish takes days to produce, I wouldn't want to lose so much time and end up making a bland dish.
So I'm asking could anyone direct me to a link to a recipe you think sounds like a real sauerbraten dish. Thank you for your time.

Sauerbraten Recipe
Ingredients
Marinade
2 large yellow onions chopped
2 large carrots chopped
1 large leek chopped
3 cloves garlic minced
2 sprigs thyme
2 sprigs rosemary
2 bay leaves
8 juniper berries
6 whole cloves
10 whole black peppercorns cracked
2 1/2 teaspoons kosher salt
1 Tablespoon sugar
2 cups red wine
1 1/2 cups red wine vinegar
1 cup beef broth
1/2 cup golden raisins optional
Roast
3-4 pounds beef chuck roast or rump roast
2 Tablespoons vegetable oil
10 gingersnap cookies crushed
Instructions
In a large dutch oven, combine all of the marinade ingredients and bring to a boil over medium-high heat. Boil for 10 minutes, then cool completely.
Nestle the meat down into the cooled marinade, then cover and refrigerate for at least 48 hours and up to 2 weeks. Turn the roast each day to make sure all of the meat gets a chance to marinade thoroughly.
Remove roast from the marinade and pat completely dry using paper towels. DO NOT DISCARD THE MARINADE. Transfer the marinade to a bowl.
Wipe out the dutch oven and heat 2 tablespoons of olive oil in it over high heat. When the oil is hot, sear the roast on all sides until browned (about 2 minutes per side), then return the marinade to the dutch oven with the meat.
Bring the liquids to a boil, then cover and reduce heat to a simmer.
Simmer for 2 to 2 1/2 hours, until meat is tender. Alternatively, you can transfer the dutch oven to a 350 degree F oven with the lid on for 2 to 2 1/2 hours until the meat is done, if you prefer.
Remove meat from the cooking liquids and set it aside on a cutting board to rest for 10 minutes.
Meanwhile, strain the marinade, discarding the solids and reserving the liquid. Return the liquid to the dutch oven.
Add the crushed gingersnap cookies to the reserved liquid. Cook and stir over medium-low heat for 10 minutes until thickened into a nice gravy. Taste and adjust salt and pepper as needed.
Slice the sauerbraten into thin slices and serve with the hot gravy poured over the top.
Sauerbraten-Style Chuck Steak
One tbsp. mixed pickling spice
One-half cup white vinegar
Seven tbsps. water
Two tbsps. instant minced onion
One tbsp. brown sugar
Three-fourths tsp. salt
Two and one-half lb. bone-in chuck steak
One cup beef bouillon
Three tbsps. flour
Tie mixed pickling spice in cheesecloth bag. Place in small saucepan; add vinegar, four tablespoons of the water, onion, brown sugar and salt. Heat to boiling point; reduce heat. Cover; simmer five minutes; then cool.
Place steak in a snug-fitting glass bowl or baking dish. Pour cooled marinade over steak; cover; refrigerate 24 hours, turning once.
Put steak and any marinade that clings to steak in a large skillet or dutch oven. Add beef bouillon. Cover; simmer 45 minutes or until steak is fork-tender.
Remove steak to a heated platter; keep warm. Blend flour with remaining three tablespoons water; stir into skillet. Cook and stir until thickened. If desired, add one-fourth teaspoon kitchen bouquet to gravy. Pour over steak. Serve at once.βYields 4-6 servings.
NOTE: if desired, in place of flour crumble about six gingersnaps.
Strain gravy; return to skillet; stir in gingersnap crumbs and cook, stirring, until thick and hot. Pour over steak.
Sauerbraten Hamburgers.
1 1/2 pounds lean ground beef
1 medium onion, minced
1 egg
1 tsp. salt
1/4 cup dry bread crumbs
or packaged stuffing mix
1/3 cup milk
1 1/2 cups water
1/2 cup vinegar
10 whole cloves
1 bay leaf
8 large ginger snaps, crumbled
Mix the first 6 ingredients lightly. Shape into 4 large patties. Brown on both sides in a hot greased skillet. Add remaining ingredients.
Bring to a boil, cover, reduce heat, and simmer about 1 hour. Makes 4 servings. (Use 2 pounds ground beef and an extra 1/8 cup bread crumbs to serve 6.)

Cube 2: Sauerbraten is a free and open-source Arena-FPS game. Its gameplay is similar to games like Quake, Doom or Unreal Tournament. It has many multiplayer and singleplayer modes.
Multiplayer Modes:

All of the above modes have the following variations:
InstaGib(One-hit kill) Regen(Regenerating health) Efficiency(You start with a random weapon and so you'll have to adapt your playstyle constantly)
Singleplayer Modes:
All Multiplayer modes are available offline with complete bot support.
In addition, There's a campaign and a Deathmatch style singleplayer where you fight monsters. There's even 2 different complete RPG maps, which function properly.
Gameplay Review:
Graphics:
Thanks to the game being fantasy-themed and having a distinct artstyle, Cube 2: Sauerbraten looks very nice. There's plenty of graphics options that you can tweak, and on max settings, the game looks very modern. But we're not really interested in that, are we? Well, at a fairly good-looking configuration, my Dual-core Intel G2020 with 2GB RAM and Intel Ivy Bridge integrated graphics can run the game at 100+ FPS!! The game has very little screen tearing even with vsync off, too.
Audio
The game has a pretty standard metal-themed soundtrack. Music is purely subjective, so everyone's experience will be different, but I personally think the music is OK. Some of the SFX can feel old, though.
Maps
This game has over 250 maps!(or is it 300+? idk, I'll have to check) Every map is distinct, but you may find some recurring themes. Many fanous maps are included with a Sauerbraten-flavored twist(like de_dust2, ctf_face etc.)
Weapons
There are 8 weapons in Cube 2: Sauerbraten. Your fist, a pisol, a shotgun(my favourite), a rifle(pretty much a sniper), a minigun, a rocket launcher, a grenade launcher and a chainsaw. The weapons have only one firing mode. This lack of weapons may seem bad, but it actually simplifies the gameplay.
Movement
There's NO FALL DAMAGE, and it's intentional. There's also simple bunny hopping and no strafe jumping. So the movement is also simplified.
Bots
They're VERY good, probably the best I've seen in a free game, but don't expect them to excell in complex modes like CTF or Capture.
Overall
This is a very solid fps, I give it 9/10
