Yummy MEATBALLS!! Mix One pound ground meat. 1 egg, 1 cup Panko bread crumbs, 1/2 cup milk, 1/4 cup grated parmigiana, salt , pepper. Gently brown on low heat. When browned, bake in oven at 375 for 20 minutes!

Who has the Best Eggplant Parmesan/Parmigiana?
I am dying for some good eggplant parmesan. My go-to was always Luigi's Italian American Restaurant on University Boulevard and I was so sad when they permanently closed. I haven't had eggplant since then. It seems that eggplant parm is usually either really good, or really bad. Where can I get a good one? Thanks!

Melanzane Parmigiana - eggplant in an oven or deep fried?
Hi all,
On my way through Italian cuisine, I discovered a recipe for Melanzane Parmigiana in a cookbook by Lidia Bastianitch.
Actually, she has published 2 different recipes for this dish. One where the eggplant is battered in flour, egg and breadcrumbs and then baked in an oven for 25 minutes (Lidia's Italy in America) and the other where the eggplant is dredged in flour and eggs and then deep fried in a pan for a few minutes (Lidias favorite recipes).
Most of the recipes in the internet use the version with the egg plant deep fried in a skillet. I was wondering if anyone has ever tried the version with the breadcrumbs and the oven preparation .

Went Wild! Chicken Parmigiana-cooked the chicken on the griddle. No!! Better in cast iron cuz grease is contained to certain area! My sauce was homemade mushroom, frozen (see Gourmetanniemack). Waaay too much food for a normal person:-)

Chicken parmigiana is overrated
People often order and talk about how chicken parmigiana is their favorite food in the US. The problem is the majority of places here make a garbage version of this food. It doesnβt matter if itβs your local favorite Italian place or a fancy one just still just meh 90% of the time. Also, every person I have ever know who makes this and itβs the βbest dishβ they makeβ¦ itβs bland or not very good.
