Edit: Due to wind I have decided that I am going to sear the chuck steak, then roast in cast iron in oven with some potato slices and garlic butter baste it. Sometime I'm gonna put in the effort to dig a BBQ pit out of the snow so I can BBQ in wind in more comfort and with less likelihood of fires.
