I feel like an idiot for asking this question but how do you buy fish at a market? The only fish I ever buy are the frozen kind from costco or on occasion a filet of something from whole foods or wherever. But I have a few chinese markets near me that have really great fish markets but its always whole fish and it's kind of intimidating. I've read how to pick a fish out, and I get that but what about the rest.
What do they do for you, do they gut it and give you the filets? Can you get half of it? I feel like a total moron like I should just understand it but I'm totally lost. So help?

Has anyone actually caught an iridium quality night market fish?
I thought of this while fishing for the Blob and Spookfish, but noticed that every time I cast my line in the center tile, I always get a gold quality. Keep in mind that I based this assumption from posts I've seen before that the distance from the shore affects the fish quality. I've tried to search for some way to get iridium fishes but all I saw was:
-Get a perfect catch
-Get same fish twice as a perfect catch
Tried these in-game, only got gold quality.
