Does Amsterdam have any organic wine bars? I couldn't find any on Yelp. There were quite a few in Paris when I visited last year. I'm making an effort to eliminate processed foods, preservatives and sulfites from my diet. I'm feeling great (maybe it's all the exercise).

Title says it all. I have fallen in love with Kombucha, which can be quite expensive. But itβs funny that something I would consider good for me I cringe at the cost of, but I would regularly spend $20 every other night on alcohol. I am 29 days sober and I am so proud of myself. I will not drink with you wonderful people today!
I used to make a lot of hooch the good ol way, but after getting "proper" equipment I haven't done anything particularly interesting, just typical basic stuff. It seemed about time I returned to my roots.
I recently bought some organic banana milk at the store for fun. Much to my disappointment, it didn't taste like what I was hoping for. Not being a fan of it even in coffee or tea I figured, "Well, I paid for it so I won't waste it. Might as well make it into alcohol." and here we are now.
I rummaged around and found half a packet of EC-1118 that hadn't been refrigerated and got to work.
This stuff is incredibly thick, it has the consistency of a milkshake, but no sweetness at all, so 1Lb-ish of cane sugar, and one mug full of black tea later I had my "wine must". It has a noticeable bit of cinnamon in it, so it basically just tasted like horchata after the sugar went in. Dropped in the yeast, shook the soul out of it, tossed on a trusty old ziplock airlock on it, and let her ride.
About four hours later now and I've got proper yeast activity. It's so thick that you can't shine a light into it and you can't see any bubbles actively rising.

In case anyone is curious, the OG was 1.132. Hell would have to freeze over, melt, and freeze again for this thing to actually ferment to dryness, but if it did, we'd be looking at something like 18% to 19% ABV depending on where the FG landed in the "dry" range.
Update, Day 2: Something about the fermentation is messing with the emulsifier, and "stuff" is starting to separate out into a globby layer on top and the still-together-stuff on the bottom. I have to give it a good sloshing a couple times a day to mix it back up and make sure none of that still-together-stuff gets left out. A flashlight beam still doesn't travel through at all, but it's a lot less milkshake-y than it was when this started, and the bubbles are now visible as they travel up!

I would like to know if there is anything close. Not the cheesy wanna be wine bar that has yellowtail or an obnoxious amount of BC wine. I'm talking specs that you can't buy at the liquor store all the time. Interesting wines.

Last night I made it through an evening at a wine bar without drinking wine; something I never imagined would be possible, nor until very recently, do I think I would ever have wanted to do.
About the evening β some friends chose the venue to celebrate a recent birthday. I was a little anxious about going, as I havenβt been alcohol-free for that long (two weeks yesterday), and wine was definitely my drink of choice. I didnβt feel 100% confident that I wouldnβt drink, and was a bit worried about going. To prepare, I scanned the menu before leaving my house, and picked out a non-alcoholic option that looked good to me. I arrived a few minutes early, ordered a ginger beer, and waited at a table. My friends showed up a little while later, ordered wine, and asked me if I wanted one. I hadnβt planned any excuse; I ended up saying something about alcohol not agreeing with my stomach recently, and that was the end of the discussion. We moved on to talk about other things.
After the initial decision to order a non-alcoholic drink, it seems that everything else fell into place to just not drink. One thing that I savored was the absence of the preoccupation I would normally have with wine consumption. Usually, I would constantly monitor the level of wine in everyone elseβs glasses to determine how soon I could order another. It would be harder and harder to concentrate on anything else as the wine level in my glass got lower and lower. Last night, I periodically glanced around at the wine levels in glasses, realizing it didnβt matter to me. It was a little surreal watching the evening unfold without that constant worry hanging over my head.
I was also pleasantly surprised by my friends commenting more than once on how βgoodβ I looked. These are wonderful, big-hearted friends who are always very generous with their support, however, it did seem that they noticed something really different about my appearance (I donβt know that I see much difference after only two weeks of not drinking, except perhaps that my face isnβt as puffy). It was very heartening.
Driving home I would normally stop at the convenience store and pick up a bottle of wine (or more), and maybe even a pack of cigarettes. I was feeling pretty proud of myself for not drinking at the wine bar, so not stopping at the store seemed really easy. I came home and drank a cup of peppermint tea under a blanket in my pajamas, instead of sitting outside in the cold drinking wine out of a plastic cup and sm
