Fromage blanc culture?

Hi I have a recipe for a cheese cake I’ve been wanting to back for my family for years it calls for fromage blanc cheese which isn’t imported to the us much if at all so I need to make the cheese myself but am not sure where to buy a culture online any suggestions would be appreciated

Voici le bilan de la semaine dernière :

Mon bilan est court cette semaine 👍.

J'ai une question pour toute personne intéressée :

Quel est votre avis de le gâteau au fromage américain, fait du fromage à la crème de Philadelphie ? Je l'aime, mais ma compagne française préfère le gâteau au fromage blanc. Je ne connais pas cette version. J'imagine que le fromage blanc soit moins dense que le fromage à la crème de Philadelphie. Sa plainte est que le style américain est trop sucré par rapport au style français, et je comprends ce sentiment. Je préfère les desserts moins sucré aussi. Je n'ai jamais essayer de gâteau au fromage blanc. Avez-vous un avis de l'un ou l'autre ou les deux ?

Mon fromage blanc est périmé

Bonsoir r/france,

J'ai voulu me prendre un peu de fromage blanc ce soir, mais quelle n'a pas été ma surprise, le couvercle était gonflé.

Date dépassée de quelques jours, pour un produit pas entamé, j'ai trouvé ça curieux. Et en observant l'étiquette avec la date, je me rends compte qu'elle est collée sur une autre étiquette... J'arrive à séparer les deux et je me rends compte que la première étiquette collée indiquait une date antérieure de 15j...

Honnêtement, je suis sur le cul, c'est pas un pot acheté dans une supérette de nuit mais dans une enseigne relativement importante.

J'ai envie de croire à une erreur d'étiquetage et en même temps... Je trouve ça quand même louche.

Voilà, pas grand chose à dire pour conclure, à part que j'ai pas eu mon fromage blanc.

Comment mangez vous votre fromage blanc ?

C'est un sujet de débat avec un ami donc voila....... Moi je le mange dans un bol avec du sucre et des fraises et mon pote sur du pain avec du beurre

(et je précise j'ai mit l'option dans un bol avec du sucre mais si vous le mangez dans un bol MAIS sans sucre cochez quand même dans un bol)

Contrairement aux idées reçues, le fromage se marie de préférence avec les vins blancs

Cela a été débattu rapidement sur ce post aujourd'hui et aux vues des réactions surprises des différents lecteurs je me suis dit qu'il serait bien de s'attaquer à cette idée reçue de longue date que le fromage, forcément, c'est avec une bouteille de rouge.

Cependant, j'aimerai vos opinions !

La première fois que j'ai sorti une bouteille de viognier chez le beau-père pour accompagner les picodons, il m'a pris pour un simplet. Lui qui avait l'habitude de sortir toujours le même marsannay à chaque repas depuis des années.

Making Fromage Blanc today

Someone was asking about fromage blanc which inspired me to make it. Money and cheese-able milk are in short supply at the moment, so being able to make a cheese with only a liter of milk sounded like just the ticket. Very simple recipe:

  • 1 liter pasteurised milk
  • 15 ml of mesophilic yogurt (see below)
  • 1 drop of single strength rennet (10 IMCU total)
  • 4 drops of calcium chloride (probably optional, see below)

Add the yogurt and stir for a minute. Add the calcium chloride milk and stir for a minute. Add the rennet and stir for a minute. Hold at room temperature or a little above (I like 25 C) for 8-12 hours, or until the curd separates from the side of the container and whey is floating on top of the curd.

Put a colander over a pot and line it with a cheese cloth. With a ladle transfer slices of curd into the cheese cloth. You can gather up the corners of the cheese cloth and hang it, but honestly I find it drains fine in the colander. Just make sure to empty the pot every once in a while so that the curds aren't sitting in whey. Drain anywhere from 5 minutes to 6 hours depending on how thick you want it (totally up to you).

To make mesophilic yogurt, just take a bit of mesophilic DVI culture and put it in 500 ml of milk. I like to hold it at 32-34 C until it gels (8 hours or more). This is now a "mother culture". You can use it instead of your DVI cultures in making cheese at a rate of 15 grams of yogurt per liter of milk. I like to make up a new mother culture before making cheese because it ensures healthy and predictable growth of the bacteria. It also allows you to measure very precisely which is hard to do with a DVI culture for small batches of cheese (aforementioned money and milk problem means I'm often doing 2-4 liter batches).

This is really the prototype for any lactic cheese. If you use goats milk, then you have chevre. You can add some geotrichum candidum to the milk, drain the curds in small forms and salt them to make a bloomy lactic cheese. The awesome thing about it is how easy it is to make. No cooking. No complicated temperature rests. No stirring. No pressing. No worrying about pH targets. Just add a drop of rennet and some yogurt and wait.

I think it is likely that lactic cheeses don't need calcium chloride. Probably enough calcium will be released as the pH of the milk drops. The rennet doesn't set until quite long into the process. However, I haven't tried it. I also think that it's likely that

Substituting cream cheese for fromage blanc?

My partner is from France, and his mother shared her recipe for cheesecake, which uses fromage blanc. Living in the States, fromage blanc hard to find for the layperson.

I am considering following her recipe to a T, except using cream cheese in place of fromage blanc. I am curious if anyone here might know of any potential issues with that, given the different textures, fat content, and other elements (sugar?) between the two ingredients.

Her recipe also calls for adding egg whites to the fromage blanc, which gives me pause for adding to cream cheese.

The recipe is:

  1. Take 2.2 lbs fromage blanc and beat in 3 eggs yolks
  2. Add in 1C superfine sugar, 2 tablespoons of flour and mix all together
  3. Whip 3 egg whites until stiff, add to fromage blanc mixture
  4. Add the pie crust to a buttered dish, add the filling
  5. Bake for 45 minutes.

I could certainly just follow an American cheesecake recipe, but wanted to try hers if at all possible.

Tried foodwishes' fromage blanc and still got some questions

So I tried this recipe (well, actually, I tried it for the third time, it worked "properly" only once): https://foodwishes.blogspot.com/2008/06/you-dont-have-to-be-cheese-whiz-to-make.html

I noticed that my results are slightly different. I checked the temperature of my whole milk with a meat thermometer very close to the 80c range, then poured in my buttermilk and my lemon juice and let it sit. However, after letting it sit for 10 minutes, the whey that I'm left with does not have the greenish-yellowish tint as in the video I linked above, but is rather still white.

What did I do wrong...and...can I try to heat up the still-white whey and add some more lemon juice to get it to curdle again?

I have been making simple soft cheeses. Other than Fromage Blanc being looser, is there much difference here? Basically warm milk 86F, add mesophilic culutre. Incubate. Drain whey.

For more experienced cheesemakers, is there nuance I am missing here or are they just different cultures names for similar product?
