βΊ 500g Chicken mince [ use thigh mince as it contains fat, which makes kebabs juicy ]
βΊ 1 tbsp Coriander seeds Roasted & crushed
βΊ 1 tbsp Cumin seeds Roasted & crushed
βΊ 1 Onion (100g)
βΊ 1 Tomato deseeded & chopped (100g)
βΊ 4 tbsp fresh Coriander finely chopped (20g)
βΊ 2 tbsp Mint leaves) finely chopped (10g)
βΊ 2 Green chilies finely chopped
βΊ 1 tbsp Cornflour
βΊ 2 tbsp Cornmeal (Makai ka atta )
βΊ 1 & Β½ tbsp Ginger garlic paste
βΊ 1 tbsp Red chili Crushed
βΊ 1 & Β½ tbsp Anardana (Dried pomegranate seeds) crushed
βΊ 1sp Garam masala powder (Whole spice powder)
βΊ 1/4 tsp Ajwain
βΊ Β½ tsp Salt or to taste
βΊ 1 Egg
Directions: -first roast the cumin and coriander seeds on a dry pan for a few mins then roughly crush them in the motor pastor.
In a bowl, add chicken mince, cornflour, , dried pomegranate powder,ginger garlic paste, salt, cornmeal/maize flour, red chili crushed, cumin seeds, garam masala powder, green chilies, tomatoes, onion, mint leaves, coriander, egg, crushed coriander seeds and mix well until well combined. -
Cover and let it rest for 1 hour
-Take a mixture and make 2 kababs of good size.
-In frying pan, heat oil and fry chapli kabab on medium-low heat until done.
