Muhammara is a Levantine dip with a sweet, sour, and umami flavor profile. It's made from roasted red peppers and walnuts, and takes no time at all to make. Full recipe inside
We eat a lot of dips in the Middle East, some you've heard of like Hummus, Toum and Tahini, and others that are less well known like Muhammara. This dip is thought to have originated in Syria, and it takes full advantage of the complex flavors you can get by roasting red peppers and toasting walnuts. Once they're combined with pomegranate molasses and a few spices, the result is a spectacular tasting dip that is Sweet, Sour and Umami all at the same time.

What is Muhammara
As mentioned above, Muhammara is a dip that's made from roasted red peppers and walnuts. Syria is well known in the Middle East for its red peppers, and the area surrounding Aleppo (Syria) and Gaziantep (Turkey) is famous for the famed Aleppo pepper. This is a pepper very similar to paprika in terms of it's sweet and savoury flavour, albeit with a slightly hotter aftertaste (10,000 Scoville as opposed to 1000). The combination is everything you could wish for in a red pepper, and it's commonly ground up into pepper flakes or a concentrated pepper paste. These ingredient are extremely popular in Syria and Turkey where they are used in many savoury dishes. But due to the Syrian Civil War, production of Syrian Aleppo pepper has declined dramatically and in it's place the use of Turkish Pul Biber, and Biber Salcasi have risen. This is one of the key ingredients in making Muhammara, however, I've found that it's easily replaced with either fresh paprikas, or red bell peppers and you still get an amazing red pepper dip.
Rather than relying on the use of red pepper paste for my Muhammara, I take Paprikas or Red Bell Peppers and roast them in my oven until charred and smokey(these would taste even nicer on a grill). Then once they've cooled down, I peel off their skin, remove the core and stalk of the peppers and then they are ready to be turned into a paste. Processing these in a blender or food processor, will result in a simple and delicious red pepper paste, that goes great in marinades and sauces for all sorts of recipes. To make it into Muhammara I also grill half an onion, and toast walnuts and breadcrumbs in a pan. Fermented shito (Ghanian hot pepper paste) served with sweet fried plantain. This is like Ghana's ketchup, goes on everything, and likewise isn't normally fermented. I fermented many of the ingredients and then did the cooking in oil phase and blended it; the result is really intense & delicious.
