I really love seeing everyone’s posts about cheese they’re making at home. I wish I could show what I do at work but I signed a non disclosure agreement and I could loose my job. In a 12 hour shift I’ll make about 100,000 pounds of cheese. I really love my job and I find the process fascinating
6 hours of a Friday manufacturing class does this to you.

I'd like to try, but I have zero knowledge about cheesemaking. Do you think I need to read more about it, or can I just jump in and try to follow the steps on the video and see what happens?
If you suggest the latter, I can'tseem to find lipase (I live in Switzerland).. is there anything I can use to replace it?

Just wondering if there are any amateur cheesemakers from the Brisbane/Gold Coast area who would be interested in a get-together to meet other cheesemakers, talk techniques/recipes, and sample other people's cheese? Just trying to gauge interest at this stage.
