I have to be stimulating myself constantly, or else it goes flat (especially when I am like standing up), laying down is fine. is this normal?

When i go from laying down for a while to a standing position i feel my heart start to race. I have taken my pulse manually, and also have recorded an ecg on apple watch. It shows sinus tach. My heart rate increases from upper 50s while laying down to 110-130 standing up. As soon as i lay down my heart rate drops back down to the upper 50s almost instantly. Any thoughts on what this may be?
Iβm doing a pop up for my company and it requires me to stand for 8 hours per day, I normal sit at the office so I guess Iβm not that used to standing.
Why does our body motivate us not to sit, if itβs the healthiest position?

Let me give a little context. I work in a position where body language is analyzed as a potential threat. I observed something interesting yesterday that I want other opinions on. This includes verbiage as wellβ¦ I (31f), was in a job interview. Prior to the interview I spoke with the boss (45+m). The boss stood square to me. Which, we have been told is typically a position of trust and non-threat with peers. He had his hands in his pockets. He spoke of income, benefits of working for the organization. I conducted my interview and went back into the lobby. I observed the boss talking with another applicant (30βs m). The boss was angled his body and spoke of this applicants current organization and job functions. I viewed the conversation to be more formal with me and more conversational information gathering with the other applicant. The bosses hands were up to his chest. Typically, we were told this to be a interview stance or fighting stance.
Am I reading this correctly? Was the boss more eager to sell me on this position? This contradicts some of the things I have read regarding typical body position.
Granted, I am probably reading too much into this but found this very interesting.
