I've been trying to wrap my head around this for quite some time. I've frequented over a dozen different specialty coffee shops, had all their drip coffee offerings, tried all their pour-overs (V60, Kalilta Wave, Chemex), and french press coffees, and when I ask about their coffee to water ratios, they all unanimously tell me it's 1:18.
Yet when I research coffee ratios at home, I almost always see suggestions for ratios ranging between 1:15 to 1:16.6, depending on brew methods and taste preferences. Also, if you'll be adding dairy and sweeteners to your coffee, which most people in coffee shops do, a 1:18 ratio seems very weak, and will lack any body and the flavors will all be muted.
Sure, I can easily tell the barista at the coffee shop to use less water when making my pour-over, but the average coffee drinker isn't as immersed in the coffee world as I am, and wouldn't know that adjusting brew strength is an option. Then what happens is they'll be underwhelmed by the pour-over they just paid $5 for, and will stick to regular drip coffee, since they see no added benefits for the manual brew method.
So why not give the customer an option to choose their own brew strength? Regular or Extra body? I mean, I know profit margins for coffee aren't high to begin with, but as a customer, simply knowing I can have the strength of my coffee adjusted, the way I do at home, would make me appreciate a coffee shop more.
