What if I boil and then bake my sweet potatoes?
Tried googling this but couldn't find an answer. I know boiled sweet potatoes have a low GI, and baked sweet potatoes have a high GI. But what if I boil the sweet potato and then bake it to make sweet potato toast? What would that do to the GI?
After a fasting blood test last week my glucose levels came back as 100 and my doctor has recommended additional testing for prediabetes. It is not clear to me if he wants me to take the A1c test or just get another fasting blood test in 3 months. Either way, I want to switch to a prediabetic diet

I tried to make some corn late winter/early spring when I first saw it pop up in the store, but it turned out awful. I'm not sure if that was because you shouldn't buy corn in winter or if I just cooked it wrong.
I looked it up and there seems to be some difference of opinion on how best to boil corn. Some say you boil it for X minutes. Others say you put the ears in until it boils and then turn the heat off and leave the corn in for X minutes.
Doing a bit of a seafood broil thing tomorrow for Father's day and I'd like to not screw it up.
Any one have any suggestions for a foolproof way to cook corn on the cob?
