Hi Guys, I'm really new here and am just planning my first wine, which is going to be a raspberry wine (they're in season in NZ at the moment so I have them coming out my ears!). Anyway I've been looking at recipes and was wondering why I'd add sugar to a wine like this considering the berries are quite sweet, yet to my knowledge, little to no sugar is added in a grape wine?
Apparently yeast likes a slightly acidic environment and ethanol is slightly basic and sugar is neutral
I have some malic acid 10% solution on hand should I add this to my sugar wine or is this not the prison hooch way.
Anyone ever tried it? I have no idea how much to add
I've never been an unhealthy weight, but weight has fluctuated from being a little too skinny to being a little too meaty. I'm lucky that I have a fast metabolism, but I've always been a person with extreme sugar cravings, chocolate, ice cream, cake, gummy bears, you name it. I can't count how many times I've binged on sugary stuff, eating a kilo of ice cream plus two bars of chocolate and more within an hour or two. Not just making me gain weight, but also super unhealthy, obviously.
I've always believed that alcohol makes things worse. When I get drunk, I get even more cravings and I could eat and eat until I almost vomit. BUT ever since the whole Corona quarantine situation has started I've been drinking red wine almost every single day and it's been SO helpful against those cravings. I'm not talking getting hammered every day- I never drink more than half a bottle of red wine. And while I'm not sure how exactly it works (probably stabilizing my blood sugar? I don't know really), it has tremendously helped. I usually crave sugar all day, especially in the evenings. Red wine almost completely kills my cravings (not my appetite- When I'm hungry I'm hungry) and I don't constantly think about going down to the store to buy another bar of chocolate. It's amazing.
Has anyone had a similar experience? Just FYI, I'm not saying 'Start drinking to lose weight' lol, obviously it doesn't work like that. Alcohol usually makes me hungrier and crave more food, but somehow the right amount of red wine kills all cravings. And no, I'm not an alcoholic and I don't NEED to drink. I'm perfectly fine not drinking for days or weeks. I'm just saying, because I find it very interesting and I have no idea why it's working.
So, is it just me or has anyone noticed the same?
And I just add a little at a time until I get the desired sweetness?
So about half way through the fermentation process I want to add more sugar for stronger results do I need to add more yeast as well?
Finished my first brew ever and am quite surprised by how tasty it is, and the effect feels cleaner than liquor store booze. I don't get as groggy it's more clear headed and motivating, and the hangover doesn't seem as bad. Is it just placebo/excitement from drinking my first brew, or is it the lack of methanol or other fusels/bad alcohols that results from brewing with pure sugar as opposed to pectin containing fruits?
For those who distill out the good stuff - do you notice this too?
edit- for clarification, I'm drinking the mash. Tastes not much different from store bought wine to me, and much better than some red wines I've tasted. Not sure why more people don't do this, it's no different from mead really.

I know the rules said not to say "The main riff" I wanna know the lead guitar riff, it spans the entire song but if you listen to the first 10 seconds you'll hear the riff I want to be tabbed.
