Evidence, even if not permanent, can still relay the truth. Say we lost evidence that Washington crossed the Delaware. Does that mean he did not cross the Delaware? It does not. If in one hundred thousand years, the original Declaration of Independence fades away and turns to dust. Does that mean the Declaration of Independence was just a fabricated story passed down from generation to generation? It does not. There are many historic examples that can illustrate my point, but let's look at scientific examples. Currently, we have fossil evidence for dinosaurs that is decaying. In however many amount of years, these fossils will have turned to dust and ash and we will no longer be able to study them and conclude that dinosaurs existed. Does this mean the T-Rex did not exist? It does not. In billions or even trillions of years there will be no evidence our sun ever existed, as well as perhaps even human civilization, or any kind of life on earth whatsoever. Does this mean these things never existed? It does not.
We are often unable to provide evidence for things that are later proven true. Jillette's argument assumes humans must fully substantiate any claim to knowledge before it can be true.
Even if humans in the moment are unable to discern possible evidence for something, that does not prove said thing false. Robert Hooke believed in cells before he was able to satisfy burden of proof to the scientific community of the time. Say all scientific advances in the past 1,000 years were erased, and no knowledge of any kind was passed on, like Jillette's hypothetical states. We might be completely unaware of Hooke's Cell Theory, all of Einstein's work, the Laws of Thermodynamics, and Newton's work, but that does not mean not all living things are composed of cells, that light does not travel at a constant speed, nothing tends towards decay, and gravity is nonexistent.
