What can I use instead of coconut milk with curry paste?

I bought Thai curry paste as I wanted to experiment with new flavors, but didn't realize it needed coconut milk to which I have a family member allergic to. I haven't found a recipe that mentions water or any other type of milk. Would it be alright to add almond milk? Would it be too sweet? Has anyone tried to make it with plain water? I want to make a full-on curry at least once, I know that otherwise I can use oil to marinate.

Coconut Milk dishes, what do asians do differently than I?

I made Curry from Coconut Milk once. It was overwhelmingly sweet, just way too sweet like I could feel my body wanting to throw up half a day after eating that. Now I just bought one of those frozen instant meal asian not green but orange curry you microwave and read that it has coconut milk... And it tastes spicy but not sweet. So good actually. I can't taste anything similar to it and what I made with canned coconut milk even tho its says that this one is made with coconut milk too.

Is it just the quantity? I mean maybe 95% cream, 5% coconut milk is the way to go but cooking for only 1-3 so that much quantity not possible and opened coconut milk probably wont last in refrigiation that long.

And I just feel like they do something differently. Something must be different. There is no way they can get perfect curry with coconut milk while curry foods are the only ones in the entire world I just can't cook, even with full cream no coconut milk my curry tastes HORRIBLE. However I use powder and main reason why my green curry tastes horrible cuz its either tasteless or powdery but still... lets not go off topic. With coconut milk too I feel they do something differently.

How do I get that real asian coconutish but chili not sweet taste in my green curry? I want it. I wanna I wanna I wanna

Am I using the wrong coconut milk??

Hey guys! I hope someone here can help me with how to make a good, Iced coconut milk latte :]

I used the "Chao-Koh" brand coconut milk and poured it into my cup which had ice and espresso in it. As soon as I stirred to chill the drink, all the coconut started to curdle and eventually became bits of hard butter....

Am I using the wrong kind of milk? Or is there a missing ingredient I'm supposed to put?

I just wanted to enjoy a nice cold and CREAMY coconut milk latte... :(
