Honestly, it was pretty much my gateway to fantasy but I haven't really seen many people talk about it so I was wondering if anybody ever read it before?

As the title suggests, I've been asked to run a Weird West game for a group that love long, epic campaigns, and I'm considering adapting the GPC for the role. It looks hard, but doable. Has anyone here adapted the GPC for another system in the past? I'd love some insight into how it went.

Just to get this out of the way, I love Pendragon. I played it for a long while and it's been key for my formation as a DM.
I also really hate Pendragon. I hate that there are different skills for different weapons, I hate how you can't just say the right thing because you need to roll the damn Courtesy skill, I hate how painfully slow it is to accrue Glory and how slow the character progression moves, I hate how Domain amounts to "balance this spreadsheet and see how much money you earn a year" without any meaningful choices...
But I also love Pendragon. I love the feeling of being a fighting man that's not defined by his ability to do violence, but instead by his position in society; I love that you're not fighting for money but for your own name, revenge on your father, your homeland or your religion; I love that you have a place to go back and call yours that you can customize with buildings and see it flourish; I LOVE the Grand Pendragon Campaign and how much it stokes my creativity with its events (you can interpret each character in a thousand different ways and move it off the rails quickly, it's awesome); I love tourneys, can we talk about those; and I love the Passions that force you to go a certain way and act in a distinctly Knightly way.
So my question is: how can I run Pendragon without the Pendragon system? Or at least a cool fix / houserules that would make it a bit OSR in feel?
I'm aware that there's a Knight and Paladin class in OSE, but just plopping it down on the world doesn't change that it's a game about going into tombs and earning ludicrous amounts of cash. I'm talking about something a bit more substantial.
I'm vaguely aware of Lion & Dragon and Dark Albion, but I haven't checked them out yet. Any other interesting suggestions?
Ninja edit: I was thinking of involving Dolmenwood in this in some way... but I don't know how. I feel like there's a lot in common between the feel of Dolmenwood and Pendragon, and the Dolmenwood itself could easily be put somewhere near Scotland, but I wanted to incorporate it with knights first and foremost.
I've read recently that the House of Pendragon's name means something similar to "Dragon's Head".
And that the Arthurian myths originated from Wales.
I'm looking for a one-word translation. Something like "Dragonhead" but in Welsh.
Google translate just gave me "Pen y Ddraig"
This Manga started pretty good but it was soon eclipsed by a petty villain that was so lazy and nonsensical , that gave me a preview of what's to come for the rest of the story.
The plot goes like this, MC's family, a duchal one, gets set up as traitors of the Empire and killed, only MC survives because somehow they expected him to survive 10 years in this world's version of the French Foreign Legion, one day before being free from his punishment, the inheritor of the Pendragon family, Eren, appears there for some reason that's left as a mystery, to help killing some demons with his Dragon, but they were plotted to both die, so he does something with the Dragon to return time, MC is reincarnated back in time but on the body of the Pendragon family's kid, instead of his own.
So MC decides to take this opportunity to help clean his family's name by taking the Pendragon Family's power. Problem is, Eren Pendragon, is absolutely worthless as a noble and is the main reason his family is decaying.
Enter petty villain A. Luna, another inheritor duchess kid has recieved order from her parents to break her engagement with Eren, along her scorting her is the petty villain, a MERE Knight of their family.
Now here is my problem with this guy, he was supposed to be the classical asian villain that goes against MC because he is completely ignorant of how utterly powerful MC truly is, the problem is, he comes as ridiculous. In the short span this guy was around he
A) Disobeyed his ruler Luna's direct orders in front of her ( He commited treason )
B) Joined hands with rebels of the Empire to kill MC ( Joining with rebels is a betrayal of the Empire )
C) MC is also a descendant of the Imperial family ( thus is regicide against the Imperial family )
I don't think the author thought this through. What was this guy's motivation as a character ? Suicide ??
Even if he somehow succeeded killing MC ( Reinforcements were on their way and they were elite Knights ), he still had plenty of witnesses who would serve as a source to investigate the killing of a high ranking noble. Many of which could be tortured ( bandits ), to confess the truth.
His liege, Luna, also was absolutely against this action, which means she was also a witness against this guy.
So yeah, you kill MC, then what ? How do you hide, with so many witnesses around, that you killed him ? In the best of the cases, this guy ends up executed, in the worst, his entire duchal family ends up executed for treaso
