Inspired by a recipe for a Reveillon cocktail I found last night, Iβm now in search of Allspice Dram.
St Elizabeth is one brand
Has anyone seen it around town?
Iβve called Whole Foods, Natural Grocers, and Crest, and been to Sprouts, Winco and Homeland. If they have any allspice at all, itβs ground, not whole.
Iβm just tryin to make some mulled wine and brine some pork loin.
I need some allspice berries, known as pimento in Jamaica
Iβve tried Robertβs in the Marigny, Rouses and Winn Dixie on Carrollton and Lakeview Grocery.
Is there a Jamaican grocery anywhere in town?

2 oz Whiskey (I used Alberta Premium Rye)
ΒΌ oz Allspice Dram
ΒΎ oz Lemon Juice
Β½ oz Cinnamon Syrup
2 dashes Orange Bitters
Shake with ice and strain into an old fashioned glass with fresh ice. Garnish with a cinnamon stick and a large strip of lemon peel with a few whole cloves pressed into it.
I bought a whole peppercorn mix and it included βCaribbean Pepperβ which upon inspection turns out to be allspice. I donβt care for it in my general-pepper-that-goes-on-everything, so Iβve been picking the allspice out and saving it but now have a lot of whole allspice berries. Any ideas about something I can do with it rather than throwing it out? It doesnβt have to be strictly culinary.
Iβve got a bottle of green chartreuse and allspice dram which are both excellent in the recipes I use them in, however Iβve never seen them used together in a drink.
Anyone have any ideas of drinks that call for both?
I was really excited for this holiday season: I wanted to make Jeffrey Morgenthaler's Flannel Shirt for Thanksgiving guests. Alas, I was disappointed with the results. It's too sweet & sour for me. So, with a bottle of St Elizabeth left over, I went looking for other seasonal recipes that call for allspice dram. I found Winter and made a ginger liqueur just for this recipe. Again, it's not what I'm looking for. Too sweet, too sour. I want something on the bitter side--like a boulevardier or vieux carre, but with the ginger and/or allspice flavors that evoke the holidays. Is this achievable? I'd love your ideas.
In addition to the St Elizabeth and ginger liqueur, I have on hand: bourbon, rye, a few scotches, cognac, Mount Gay, London gin, blanco tequila, pisco, vodka; Averna, Carpano Antica, Cynar, Campari, Benedictine, Green Chartreuse, China China, Cointreau, amaretto; and angostura, Cajun, orange, chocolate, grapefruit & peach bitters.

Recently got into Tiki and like most people can't find allspice dram anywhere around me, so DIY it is.
I've started with Alton Brown's allspice dram Recipe but then I stumbled over this post talking about leaving the allspice spirit unmixed with the sugar at the end to increase the longevity of it.
Seems like a nice idea to me and being able to control the sweetness is a bonus. My question is will I also be able to mix the allspice spirit at a 1:1 ratio with rich simple or will my spirit be too strong..? Or should I not even bother with leaving them unmixed and just finish the recipe?
Lastly in my researching of this, saw someone mention making the all spice spirit in an immersion cirulator to speed up the process but couldn't really find any info on that, if someone has that info as well that'd be awesome!
Might be overthinking it but I'd rather not waste 10 days to make another batch. Any and all suggestions would be greatly appreciated!

It seems that many cocktails that use Allspice/Pimento Dram also use grapefruit juice. I am not a fan of grapefruit juice. Any ideas of cocktails without the grapfruite juice that use Allspice Dram?
