My hachiyas arenβt ripe and I didnβt realize fuyas donβt get soft. I just ate one of the latter and itβs delicious and Iβm wondering if I can peel and put them in my food processor or a blender for making a bread pudding or if that will just be a waste of this fruit.
I was planning to make the bread pudding for an event tomorrow so unfortunately canβt wait for the hachiyas to ripen. I can use a can of pumpkin instead if this sounds like a bad idea.
I grew up in the southeastern US and would always make persimmon pudding with the wild persimmons that grew nearby. Iβve since moved and canβt find any wild persimmons, but I found a store that carries fuyu persimmons.
Iβve read theyβre crunchier, less astringent, and donβt get that super jelly soft texture of wild common persimmons.
Can they be used instead? I have a family recipe to make it, but Iβm not sure if I can use these persimmons or if Iβll need to modify the recipe.
Is there anyone else in this sub that is from the 812, or knows what persimmon pudding is? Iβve been craving some lately and wasnβt sure if there is any place in Indy that sells it

Set oven to 375. Butter and sugar a 9x13 pan
2 cups flour (sifted), 2 cups sugar, 1/2 cup brown sugar, 2 TBL baking powder, 1 tsp cinnamon, 1/2 tsp salt, 2 1/2 cups buttermilk, 4 eggs (beaten), 1 stick butter (melted), 2 cups persimmon pulp
Mix 1st six ingredients in separate bowl, Mix together the eggs, melted butter and persimmon pulp. Add dry ingredients and buttermilk alternately. Pour into 9Γ13 and bake for 45 to 60 minutes.
It is exceptional enjoyed warm topped with whipped cream, hard sauce or vanilla ice cream.
My grandmother (born in the 1890s) used to make a persimmon pudding from persimmons that would drop from an American persimmon tree in her front yard. Both the woman and the tree are long gone, as is the recipe. Does anyone have a persimmon pudding recipe that results in a custard consistency and NOT as a cake? She made this entirely on the stovetop, not in the oven. I've found quite a few Persimmon Pudding recipes online, but they all seem to call for 2+ cups of flour and oven-time. I can't reconcile that much flour and oven time with a custard/pudding consistency; many flat-out state the results are more of a cake.
I'm finding that while my family is from the north, a lot of our recipes are considered 'southern' or have very southern roots.
Help, anyone?
Persimmon Pudding
1/2 stick butter, softened
1 cup sugar
3 eggs
2 cups persimmon pulp
2 cups cake flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 cup buttermilk
Beat together sugar, butter, and eggs, until smooth.
Sift together flour, soda, salt, and nutmeg.
Add flour and buttermilk alternately starting and ending with flour.
Pour into a greased 9" x 13" baking pan and bake in preheated oven 350F. for 1 hour or until knife inserted into pudding comes out clean.
Cool in pan.
Cut into squares. Lift out of pan with a spatula.
Serve plain, with the Lemon Curd mentioned above or topped with

Lemon Curd Recipe
1/2 cup butter
1 1/2 cups sugar
4 eggs
juice of 2 lemons
zest of 2 lemons*
In mixing bowl, cream butter and sugar until thoroughly blended.
Add eggs, one at a time, beating well after each addition.
Stir in grated lemon zest and juice.
Pour into top of a double boiler and cook stirring constantly, until thickened to the consistency of thick gravy.
Remove from heat and cool.
It will thicken more as it cools.
I have a handful of Black Sapote seeds from my local farmers market as well as a seemingly endless supply of wild persimmon seeds from my 3 trees. Looking to trade for any fruit that is cold hardy enough for zone 7
This persimmon pudding cake with mascarpone cream is a recipe from a bakery that we can eat without guilt of calories or flour because persimmon is a fruit more advisable, contains carotenoids and criptoxantinas, both rich in vitamin A, a high content of vitamin C and high values of potassium, sugar and glucose.
Intructions:
In a bowl sift the flour, baking powder, salt, cinnamon and ground almonds. Reserve.
In another bowl mix eggs, sugar, lemon juice and lemon zest, yogurt and oil until they are incorporated.
Add the mixture to dry ingredients and stir until blended, without stirring too much, just enough to blend.
Peel the persimmon and cut into small cubes. Then add to the mixture.
Spread the mold with butter and pour the mixture. Bake with pre-heated oven for 20 minutes at 350Β°F or until prick with a stick comes out clean. These amounts are for a small mold about 20 cm.
Once baked let rest on a rack without removing cake from pan for 10 minutes. After this time we turn on the service plate. We let temper.

They say if you have more than you need, then build a longer table instead of a taller fence, and we will definitely have more food than we know what to do with, so if anyone is alone these holidays or maybe just wants to get away from the in-laws, we would love to have you. It's just myself, my mom, my brother, and one very gregarious kitten, and the table seats 8, so don't be shy. (Mom loves to chit-chat with strangers and bro loves to quietly watch sports all day, and I'm somewhere in between, so I promise we have something for everyone haha).
Christmas Eve dinner will be around 6pm...Dungeness crab (I just caught them yesterday) with roasted vegetables, a persimmon salad, and whatever recipe inspires me tonight, with Meyer lemon mousse for dessert. Christmas dinner will be around 4pm...smoked prime rib with colcannon potatoes, roasted carrots and parsnips, and rice pudding with raspberry sauce for dessert. And I assure you there will be no shortage of libations with either meal (two of us work in the wine business). Send me a message if you need somewhere to go!
I have some ripe hachiya persimmons and would like to bake with them, but the apple and persimmon tarte tartin recipe calls for fuyu persimmons. Will the hachiya ones work? I know they have thicker skins
