I hope someone here can help me with a traditinal russian receipt. Belyov-style pastila. For short it is Apples turned into Marshmallows. You cook/bake the apples and puree them smooth. Then you add sugar and egg-white and whip the apple-sugar-egg mixture until fluffy. Then you bake this mix on low temp.
I thought about using aqua-faber, but wasn't lucky. Now I am unsure if I just failed (I got no aqua-faber skills) or if there is a better way.
Due to my apple pastila, my mother asked if it is possible to make something like that with mangoes. I have ordered pectin powder and is open to experimenting, but this is...well I don't even know where to start or what and where to find helpful information.
Or if there is something else that is similar to pastila that can be made with mangoes; the target is that same airy crunch.
Edit: basically I'm looking for guidance on pectin ratio and if it is something that would give similar results, or if there are other major differences in apple and mango that would make it not work and if so how to adjust for those too.
