Exploiting Configurational Lability in Aza‐Sulfur Compounds for the Organocatalytic Enantioselective Synthesis of Sulfonimidamides

Methods for establishing the absolute configuration of sulfur-stereogenic aza-sulfur derivatives are scarce, often relying on cumbersome protocols and a limited pool of enantioenriched starting materials. We have addressed this by exploiting, for the first time, a feature of sulfonimidamides in which it is possible for tautomeric structures to also be enantiomeric. Such sulfonimidamides can readily generate prochiral ions, which we have exploited in an enantioselective alkylation process. Selectivity is achieved using a readily prepared bis-quaternized phase-transfer catalyst. The overall process establishes the capability of configurationally labile aza-sulfur species to be used in asymmetric catalysis.

Pasteurizing must without sulfur compounds? (noob question)

Can I pasteurize the must for a fruit country wine without using campden tablets / sulfites? I've seen that you can pour boiling water over the fruits to pasteurize them, but does this work if the skins have already been broken? Is bringing the must to a high temperature on a stove unadvisable? How would one then cool it down fast enough to pitch the yeast before bacteria or wild yeast could take hold?

I am an NIH patient with an endocrine tumor disorder related to Succinate Dehydrogenase deficiency / Krebs cycle. Can anyone tell me Nitric Oxide’s role in iron-sulfur compounds like SDH?

I have struggled with debilitating symptoms related to this gene mutation (SDHB). I notice my symptoms nearly disappear when I drink beet juice. I researched more about beets and I see they cause nitric oxide release. Then when researching the Krebs cycle, I see something about iron-sulfur proteins like SDH being destroyed by nitric oxide. The whole Krebs cycle is of course complicated for a non-chemist and I would love for someone to explain to me this interaction of nitric oxide and iron-sulfur proteins.
