What if the US never built the Old River Control Structure in the 1950s, and the Mississippi was allowed to fully divert into the Atchafalaya River?

One of the biggest untold weaknesses with the US's geography is that the Mississippi River, while being one of the most important rivers in the world, has a tendency to change course over time. Starting in the 19th century, the Mississippi started changing course, with more and more water flowing into the Atchafalaya River. By the 1950s, so much water from the Mississippi was being diverted into the Atchafalaya River that it was looking like the river would change course for good.

Instead, the US Army Corps of Engineers constructed the Old River Control Structure starting in the 1950s that would prevent the Mississippi from changing course. There have been a few floods over the years where the Old River Control Structure was in severe jeopardy of failing, but so far the structure has remained intact... for now.

But let's assume that the Old River Control Structure is never constructed. The Mississippi changes course. From what I've read, this would be an economic catastrophe not just for the US, but for the world as a whole since so much grain is exported via the Mississippi. Given the context that this would be happening in (Cold War, many Third World countries suffering famine), how exactly would history be different in his timeline?
