Calisson Puns

For anyone who's lived in or hopefully grown up around the Provence region, can anyone explain how calissons are viewed there? All the tourist guides and blogs will say calissons are the quintessential candy of Provence, but when I went to Aix-en-Provence, the locals were very "meh" about it when I brought it up. So now I'm kind of confused on what the actual view on calissons are, I feel like these tourist guides/blogs hyped them up way too much.

Are they sort of like New York bagels? Chicago hot dogs? That kind of comparison?

For context I'm a Refuse Driver (Garbage man) & today I was on food waste. After I'd tipped I was checking the wagon for any defects when I spotted a lone pea balanced on the lifts.

I said "hey look, an escaPEA"

No one near me but it didn't half make me laugh for a good hour or so!
