Where to find caciocavallo cheese?
I need to buy some caciocavallo for this weekend and I havenβt been to any Italian groceries in Hamilton yet, so Iβm not sure who would for sure have it.
It seems like Nardini in Stoney Creek might, but Iβm hoping to find somewhere closer to downtown Hamilton. Any suggestions would be really appreciated!

caciocavallo aging and culture
I've done a bunch of cheeses from David Ascher's book and 'most' of them have turned out great. (brie, tomme, a sheep/cow mix clothbound cheddar) Only ones haven't was due to my error. I am thinking about trying caciocavallo and I found a farm up in New Paltz that I can now get fresh warm raw milk from in 5 gallon milk cans so I'm thinking of branching out and trying some new cheeses.
My question is, what natural culture should I use for caciocavallo. Kiefer? Or should I just get warm milk from the cow and let it sit overnight and that should be enough. Also, I have a wine fridge I've converted to a cheese cave but it's small and no room to hang the cheese. I notice that in sicily and a lot of parts of italy and in any shop, caciocavallo is just aged out in the open air at room temperature. Every recipe I read says the typical 90% humidity and cave temperatures, but in sicily, they seem to just hang them in their house where the temp and humidity are never anywhere near 90% and 54 degrees F.
Any advice or experience would be much appreciated (besides just use DVI and figure out how to get it in a cheese cave.)
