For this post, I am referencing two books that take a Gnostic Satanist perspective.
"The Book of Devotional Service to the Dark King of Flame, Lucifer" is the first book and it is the predecessor to "Psalterium Sathanas" the second work. They were both written by J. Boomsma and published by Aeon Sophia Press.
Christ is often said to be a "Solar Deity" by many occultists/mystics, and he was often compared to the Sun in ancient Christian writings. And Christ descended to the material plane, renouncing his divinity to do so. We are then faced with the Christian doctrine of Kenosis, where Jesus is said to have emptied himself of human desire and became receptive to Yahweh's will. Eastern Orthodoxy has a similar term, theosis, meaning to "become like Christ/Yahweh." Kenosis and Theosis are essentially the purpose of life for a Christian, to fully serve the will of Yahweh.
Now, this "becoming like God" aspect of theosis is not the same as LHP apotheosis. It is essentially mimicing Christ, being obedient to god's will and suppressing your desires, ie kenosis, and becoming "holy" via the reception of the "energies" of god.
I say the "energies" of god because the Eastern Orthodox believe in a distinction between the essence and energies of god. To quote wikipedia:

The Sun's essence is a ball of burning gas, while the Eastern Orthodox hold that God's essence is incomprehensible. Thus, kenosis/theosis only means emptying yourself of your own desires, will, etc to receive yahweh's energies and to become molded in his image. You are not becoming godlike yourself, or recognizing your own divinity, etc. Your soul, in christian belief, is not of the same essence of god, nor can you receive god's essence. You

Tl;dr: What gender fits a personified sun and/or moon better?
A personofied sun and/or moon deity is a common trope both in human history and fictional worlds. Most of the time the sun is personofied as male while the moon is typically sister and/or wife to the sun. This seems to be greco-roman influence.
What makes things a bit more interesting is that germanic mythology personifies them the other way around. This seems to stem from the indo-european languages gendering the word sun as female and moon as male. For example SΓ³l and MΓ‘ni in old norse.
Because of this fictional worlds go both ways. Most seem to stick with the greco-roman setup though. I wonder why this is. Perhaps people don't want to be labeled Tolkien-clones since he used the germanic setup? Perhaps theres something inherently masculine about the sun? Then again, the sun is often regarded as life-giving which is traditionally associated with femininity.
What do y'all think?

Certainly for more local phenomena, each community could have their own, but everyone has the same sun(s) and moon(s), or other celestial bodies.
I have noticed that players around here may actually be interested to rename some of the planets to either Roman versions or Greek versions for that little bit of immersion. I am here to entertain that need without letting you to dig deep into Google.

Extended the table to include some Norse Gods as well. But the only "reliable reference" is our week-day names, which coincide with the Roman Gods (e.g. Dies Martius is Tuesday, so Tyr is the equivalent of Mars). But we should know that the concepts and divisions of the Germanic gods are so different from the Romans (which embodies most of our celestial bodies).
Also, included the Asian elemental divisions for the celestial bodies. The Asians don't view the planets as gods, but each of them has been assigned an element.
The list is very incomplete as some of the entities are very incompatible. I have already tried my best to give you what I know.
Note: Thor and Odin are really hard choices. Yet they do occupy our Wednesday and Thursday, and those days are called Dies Mercurii and Dies Iovis correspondingly. So I can't help but to assign Odin to Mercury and Thor to Jupiter.
