Additionally, given this huge difference in resources and population, why did the war in North America last as long as it did?
The way involved all five European great powers of the time plus many of the middle powers and spanned five continents, affecting Europe, the Americas, West Africa, India, and the Philippines. So why wouldn't it be considered WWI by historians?
With battles being fought between England, France, their colonies and allies all over the world including North America, Southeast Asia and India why isn't it considered a world war?
I found this gem in the Museum of the Spanish Army in Toledo:

Elsewhere Spain was forced to hand over Florida and its possessions to the east of the Mississippi to Britain, receiving Louisiana from France as compensation.

The "Britain = aggressor"-narrative is so simplistic as to border on being false. Firstly: Britain did not "goad" Spain into war. Britain officially declared war on Spain and did not play any tricks. However, before the declaration of war Spain had already signed a treaty with France ("Family Compact") that included a secret clause to attack Britain that would have triggered a little later. And Britain had reasons to suspect this. When it demanded Spain to promise that it not intend to attack Britain and Spain refused, Britain declared war. Spain was not "goaded" into war, it is a surprisingly straightforward example of a preemptive strike (Well, as much as you can call cumbersome 18th century warfare a "strike").
Furthermore, Spain signed the Family Compact/Britain declared war before the attacks on Havana and Manila, so the sentence is wrong no matter how you frame it.
It also conveniently neglects to mention that Spain attacked Portugal but could not make meaningful gains. Or the fact that the British did not just attack Cuba and the Philippines but actually captured their local capitals, thus entrenching themselves in their commercial and administrative centers.
