I'm looking for recommendations for Mezcal which I might find in the local liquor stores. Just some mid-range stuff.
I'd also be interested in tastings, bars or tours I check out.
I see a lot of posts about value and expensive bottles, but does anyone else stock up and cellar deliberately to enjoy quality mezcal years down the line?
With the way things are going economically and the growth of the Mezcal globally it just makes sense to me. I imagine a 90+ dollar bottle now might go for significantly more in a few years and if I can afford to stash one it captures the value.

I've only recently gotten into using web stores for buying, for example two months back I was able to finally get some G4. What websites do others use? I've been mainly looking on Ferment and Still, Fine Cask, Old Town and Saratoga Wines. Any other good ones?
Switching from place with little emphasis on finer liquors, more of a party bar.

Iβve always loved the taste of mezcal but donβt know anything about it. Would love to hear suggestions from this community on where to start: good mescal that isnβt too expensive.
Quite literally, Iβm asking what is the defining characteristic of a Mezcal. I ask because Iβve noticed that every Mezcal Iβve ever tried has some level of smokiness to it, but from what I understand the agave cooking method, which here is responsible for the smoky flavor, is NOT a defining characteristic. My understanding, instead, is that for a spirit to be a Mezcal, it must simply be fermented from an agave plant. Correct me if needed.
They why do I see no variance in the agave cooking method? What mezcal maestros are experimenting with non-smoky cooking methods like do the the Tequileros? Why do they all seem to limit themselves to a smoky cooking method instead of highlighting the natural taste of the agave plant? Surely some techniques (eg. Brick oven, low pressure Autoclave) might even have a positive side-effect of bringing down cost.
(AKA steaming in an oven rather than roasting in a pit, but using tepextate/Arroqueno/etc instead of Weber blue agave)
Think it would be interesting to see how the different agaves would be when done in that style.

Ingredients:
Instructions: Chill coup glass with ice. Put all ingredients in a separate mixing glass. Add ice and stir all ingredients at least 50 times. Remove ice from coup glass. Pour .25oz of absinthe into chilled glass. Tilt glass on side to rinse the wall of the glass with the absinthe. Pour out the rest of the absinthe or drink it. π Pour stirred ingredients down into absinthe rinsed chilled glass. Add a slice of lemon (optional) and top it with a cherry.

So I really like this mezcal from Zacatecas. It is steam cooked blue weber juice. I'm just wondering why is it so distinct from tequila if it's made using the same method and material. Is it because of Zacatecas terroir?
Has anyone ever made a mezcal infinity bottle? If so, what was your experience with it.
Sorry - I kind of hate these sorts of posts in other subreddits, because they're lazy. But, I'm short on time. I have a friend traveling home from Mexico soon, who has been visiting Puerto Vallarta.
I'd really like to honour the makers who maintain the traditional ways, and taste a great mezcal produced by those methods and people, not the Americanized stuff. And I don't mind spending good money for good juice.
What would be a great bottle to ask her to bring back for me?
