I been trying to find a Singapore style Hainanese Chicken place for ages for my GF, but cant seem to find it.
Im not Singaporean nor have i ever been there so i dont really know how it taste, but my GF (Singaporean) likes Phoenix restaurant' Hainanese chicken but it always upsets her stomach.
Is there any other place that have similar/better tasting Singapore Style Hainanese Chicken in or around Markham? It can even be in downtown toronto tbh, i dont mind driving around to get something she enjoys.

Planning on making Hainanese chicken this weekend, then it occurred to me, will this recipe benefit from brining? I got two whole air-chilled chicken and wonder if brining (either wet or dry) will make a juicier chicken.
The vast majority of recipes (including one on Serious Eats) don't call for this.

I'm looking to learn more about the history of Hainanese western food. Your usual chicken chop, fried chicken, etc. Any suggestions and leads for reading material are greatly appreciated
