Mutton Masala β Goat Masala Curry
Take ΒΌ Cup Oil
Add 1 tbsp Cumin Seeds let it crackle
Add 1 large chopped onion and cook until lightly brown
Add 1lb goat meat and 1 tbsp ginger garlic paste
Cook for 15 minutes
Add ΒΌ tsp Turmeric, 1 tsp Red Chili, 1 tsp Salt and 1 tbsp. Coriander Powder
Cook until oil separates, add a splash of water if need be
Add 2 sliced tomatoes and cook for 10 minutes
Add a cup of water and pressure cook for 15 minutes
Release the pressure and cook to evaporate the excess water
Add fresh cilantro, green chili and ginger
Serve with Naan Kulcha

It seems that Curry is hated everywhere and everyone wants discourage my all time #1 player. He has never had any help and has been robbed for 3 fmvps at least, ignoring 2016. I just want to know why so many people hate this guy, is it because he's light skinned or something?
I am looking for some ideas for wine pairing for three different evenings and meals and was wondering what you guys could come up with:
The first is a Beet Couscous & Goat Cheese. Might add some parmesan crisps. I'm out! I do have a light White Burgundy (Joseph Drouhin Laforet Bourgogne Chardonnay) which could stand in given it is lightly oaked and a bit buttery.
The second meal is a Eggplant Pepper Zucchini Curry (Thai), will probably add some lentils to add a protein source. A Gewurztraminer from Alsace could add a tropical & spicey touch perhaps.

Hello! I am going to make a goat curry tomorrow. I realize that goat takes a long time to cook. I want to use my pressure cooker. What is the best way to do this?
I have an instant pot. I find that when I put tomato base liquids in it burns. The only thing that seems to work is if I make it really watery.
With that being said I was thinking the my plan would be as follows
cook the gravy in my pot like I normally do (Saute onions, garlic, ginger and spices add tomatoe etc)
pressure cook the goat and add to curry after its cooked
The problem is I do not want to loose flavor when I pressure cook it in water and then add to the gravy.
What should I do here? I am concerned about loss of flavor.

This is where stats get dangerous. Stats today are still very primitive and the conversation is going to switch in the next two decades. APG for examples is going to be quickly put on the back burner when scoring opportunities are going to be contextualized much better.
