Are these dots fat blooms on the chocolate digestive?
I've heard of fat bloom on chocolate, but this seems different/creepier. Any ideas?

Chocolate help (again) - It blooms at room temperature, but not in the refrigerator
I'm an R&D Food Scientist and I've been working on chocolate prototypes for the past week. Everything I read online says DO NOT store it in the fridge, only room temp. However, my chocolates at room temperature have so much blooming on them even when I follow the steps perfectly (or try my best). The ones in the refrigerator do not bloom. Why is that happening?
They both still melt though. I can't get my chocolate to stay stable enough to stop melting, I don't know why. I read all the Chocolate Alchemy blogs and tried to follow how he tempers chocolate perfectly, but it still melts too fast. Is a a concher/refiner machine the solution? The chocolate isn't gritty and the texture seems fine, I think it's just a storage issue.

This is bloom, this is what happens when the oils and fats in the chocolate rise to the surface. This makes the chocolate a more crumbly texture. It's not mold and is perfectly safe to eat.
