I'm a very experienced Bartender but I'm at the mercy of what is I'm supply at this bar. I work at this Italian restaurant/bar once a week and I'm the only one, besides the owner, that knows how to make a proper cocktail. I'm looking for some good places of reference to put together a great, yet simple enough (for others to make), whiskey cocktail menu. Looking for any and all suggestions.
Interesting, but not fucking crazy-ass cocktails. To understand what I'm working with, a typical cocktail at this bar (small town in Pennsylvania) will run you about $8 or more.

I am very new to cocktails but I have been exploring whiskey for about a year now. There are a few whiskeys I have that have very unique flavor profiles (compared to others that I have) I wonder if yβall have any ideas for some cocktails based on the flavors I get.
Balcones Pot Still - what pops out to me is a very rich sweet corn and cherry
Balcones 1 Texas Single Malt - Tabacco and light baking cocoa notes
Nikka Taketsuru Pure Malt - Pear and light Peat
Glenfiddich 15 - dry and raisiny
1 oz. lemon or lime juice(lime preferred) 2 oz. orange juice 1 oz. whiskey of choice(crown royal or rittenhouse work best) 2 levelled bar spoons cane sugar

I'll go first: Elijah Craig Toasted Barrel. Thought it was just fine, with the pandemic didn't have a ton of time to share with friends, used it in an old fashioned.
I am sure that there is a heavy bias here for drinking with no mixer, but sometimes I want a social drink for a hot day that isn't beer. I also like low calorie/carb stuff, so I have found myself mixing with Baja Bob's sour mix (again, I'm sure that there would be a bias for a whiskey sour with fresh squeezed lemon juice etc. here). For this situation, I feel like even using my Woodford may be a waste, but I don't want a super shitty whiskey either. What level of do would tend to use for a drink of this sort? Something like Bullet or Makers?
Up until recently I've always drank my whiskey straight (neat, on the rocks or with just a few drops of water). Didn't discover whiskey cocktails until about 5 months ago. Turns out I REEEEEEALLY like a good whiskey sour. I've mainly been making them with Lot 40, Buffalo Trace, or wild turkey 101.
I feel like I don't need to be using middle shelf whiskeys for cocktails. So what is the best cheap whiskey for a whiskey sour? Alberta Premium? Canadian Club? Forty Creek? What works best?
Any fun maybe more expensive whiskeys that you normally wouldnβt have used for cocktails but did anyways that you love? I personally love Penicillins and normally would use monkey shoulder and Laphroig but I decided one day to try using some of my single malts instead and maybe throw in a lagavulin floaty. Needless to say the Matsui Sakura Cask and the Talisker storm are Amazing. Also a RB 12 and ginger ale is incredible in contrast to a Jameson one.
So last year, a friend and I explored neat whiskey. This year, weβre wanting to explore whiskey cocktails. Whatβs your favorite whiskey cocktails and whatβs your favorite brand of non-whiskey ingredients (because I know nothing outside whiskey)? Weβll be comparing cocktails by using the same bourbon or rye which is locally produced so thatβs set.
I hope this doesn't get me expelled for uttering blasphemous words... Has anyone got any favourite Japanese whiskey with mixers combinations or cocktail recipes?
