Hey everyone. We've love cooking roasts from frozen in our IP as it fits with our "spur of the moment" dinner decisions. We have a relationship with a local farm and get nicely cut rumps so we always have a bunch in the freezer.
However, we're only getting the "fall apart tender" result we really enjoy about 60% of the time. The other 40% of the time we've got very close, but not quite what we'd wanted - still reasonably tender on the outside edges with some fall-apart, but less so consistently through the whole roast once cut.
I'm at a bit of a loss as to what's causing this aside from what we're doing with the base liquid, or cook times.
What's everyone else doing for the amount of liquid (I'm setting them up with the liquid just below the bottom of the trivet) and cook times per pound?
I always do natural release, for the record as well.

I'm so tired of the SM and ASM coming into departments and acting like they know anything. Give you a couple of days of MOT and you're an expert? You don't know jack. They act like every department is a walk in the park. Just take yourself back to your office and leave us alone. Yes we know this has to be filled and that has to be filled. Yes we know this is wrong and that is wrong. All we can do is take it a step at a time. Love how they come around and stare at you while you're doing something. WHAT? WHAT DO YOU WANT? Doesn't even matter because we're doing our best to do it all.....go handle an irate customer (that you'll believe no matter what actually happened) and leave the people alone....thanks for listening!

Holy shit! Why do so many people need to have their eyes on the same document?!?! Do we really need the entire Branch and their aunts and uncles to review and critique every single briefing note I do five times each?!?! And then get approval from every ADM in the Department?!?!
