This is how we pierce fresh wheels of blue cheese! The blue bacteria cultures are added to the milk. These cultures are aerobic and need oxygen to grow. Blue cheese must be pierced to allow oxygen into the center of the wheel so the cultures can turn a plain loaf of milk into a delicious blue! v.redd.it/jg863nem67k71

Today's loaf 🍞 super happy with the result! It's the Italian herb recipe from the Zojirushi recipe book. However, I purposely didn't add dried basil because people are making it without and loving it as their plain white bread! I'll add dried basil next time 😊

Two loaves this am, first picture is Parmesan/roasted garlic, 2nd is plain. Used the same starter at its peak time and it didn’t have the same oven spring as the plain loaf did.
