I have a dinner party coming up and I want to make some ossobuco. The recipe Iβm using requires white wine in the sauce. What would you suggest to substitute with the white wine to make it halal? Would something like verjuice work?

There's a recipe for chili con carne I've been meaning to try out where an entire (2kg, 4-and-a-bit pound) beef shank is stewed in a spicy tomato sauce for about 5 hours at 350Β°F. I can't find an entire beef shank around where I live, so I was planning on halving the recipe and using ossobuco (that's what we call sliced beef shank around here) instead. What I'd like to know is how much shorter should I expect the cooking time to be if I'm not using an entire shank, but rather half the amount in sliced pieces of it.
