In a pinch fish sauce can be added to a pasta sauce to help build its depth of flavor
A few weeks ago someone asked a question about homemade pasta sauces and kicking em up a notch. Something I remembered reading was someone adding anchovies to the sauce to help build a more robust umami depth to their sauces and I wanted to give it a shot.
Well, low and behold I forgot to grab anchovies at the store and realized this when I was making pasta sauce later in the week. But I remembered that I have a bottle of fish sauce in the fridge and figured I might as well give it a shot, so I put in a bit, probably a 1/4 tsp and it definitely helped bring a umami punch.

Baja Barramundi with Yellow Rice & Salsa Fresca. Yum. I loved this. The salsa and sauce brought the brightness of the lime and the fish skin was nice and crispy (I normally don't eat it but I did this time). I would remake this for sure.

Yum Woon Sen from Story of Seasons: Pioneers of Olive Town! I had to substitute in rice noodles, but the dish still came out as intended! I would recommend using a bit less fish sauce in the recipe I used if you donβt like fish like myself.

In spite of what Kenji says, fish sauce DOES make my food taste like fish. What am I doing wrong?
When added to marinara for example. It just tastes like fish! Everyone raves about fish sauce at the end of a red sauce as an ultimate "umamai hack" and here I am not seeing the light.
Could I be doing something wrong?
