After the beginning of the global spice trade around 1500 B.C, did herb and spice populations stay relatively healthy and stable throughout ancient history? Have some major plants gone extinct due to agriculture practices, changing culinary preferences, or military action?

First time asker! I was curious how stable rosemary, sumac, saffron, basil, cinnamon, cumin etc…have been in agriculture throughout ancient history, since the global spice trade started in Southeast Asia around 1500 B.C.

Extinction scenarios I was picturing: Did Persians over-harvest a spice? Rulers in Axum declare a flavor illegal and it disappeared? Taiwanese merchants deem something sacred and illegal to share with the world and then had a massive crop-failure? Or was the trade's geographic diversity and its merchant network a part of its strength in keeping various plant populations healthy?

I'm not too knowledgable on this time period, so please excuse my examples if they're a bit over-the-top. My reasoning for asking this is that I was curious if there were certain flavors we will never get to experience. Thank you!

I've got a pretty good culinary garden of all your standard stuff, what're some herbs/spices/ingredients worth growing that I might have never heard of? [x-post gardening]

I recently saw pΓ‘palo in a recipe, and it's rare for me to see an ingredient that I've never even heard of. I could maybe track some down in town, but if it grows like most similar herbs I could also try to order some seeds and just try them out that way.

It got me wondering about other things that might be hard to get here but could thrive in a garden. Specifically thinking about herbs and spices, something that packs a big enough flavor to be worth going through the trouble of growing. I'm in Houston, TX so no trouble getting enough warmth/sun. [REQUEST] List of complementary herbs and spices as they relate to EACH OTHER.

It's easy to find which herbs go with chicken, and which spices are recommended for vegetables, but I can't seem to find anything about mixing them together.

Do most herbs and spices have 0 calories or is it listed as that because of the <5 per serving rule?

Title says most of it. If you're making a dish that has a lot of spices in it does stuff like cumin, paprika, pepper, salt, cayenne, chili powder, oregano, thyme, rosemary, etc, etc have any calories in it that add up enough to be worth measuring or is it actually 0?

Whats the point of adding herbs and spices to cures if you have to wash it off anyway?

I have seen quite a few recipes that require a blend of different herbs and spices during the curing stage. However, prior to drying, the cure has to be completely wahed off. As I understand it, only salt can penetrate the meat while herbs and spices stay on the surface. Is there something I am missing?
