In Indian cuisine a lot of local/native vegetation is incorporated into the cooking. For example, leaves and fruit from many commonly found trees and shrubs that were probably planted a hundred years ago go into daily cooking. Is this common in other cuisines?

One of things that struck me after immigrating to the US is the lack of edible vegetation unless someone actively and intentionally plants seasonal kitchen gardens. May be the Native Americans did consume most native plants but those cuisines didn't make it into the mainstream? Or western diet is more meat based compared to the Indian diet so vegetation is not a significant component? How does this compare to other cuisines around the world?

Im indian and my mom says growing bonsai would be like my mom throwing me in a tiny metal box as a baby and leaving me in there forever. Are there any alternatives where I can still style do bonsai stuff to living trees without feeling really bad about torturing a tree for my enjoyment.

The reason why I mentioned Im indian is because we believe that all trees are living being just like us. but in Like science I know trees cant feel stuff but its still was very uncomfortable after my mom gave me that analogy.
